Tortilla Soup...


The other day, I was at a luncheon with some girlfriends and the topic of Tortilla Soup came up.  We all agreed that the "so-called Tortilla Soup" served at most Mexican Restaurants leaves a lot to be desired.  I had a large bowl for $5.00 at this one restaurant and honestly I couldn't believe what they called Tortilla Soup.  It was definitely a great disappointment.  It was so bad, I felt like getting up and going to the kitchen to teach them how to make a "real" tortilla soup.  


Here is my recipe for Chicken Tortilla Soup sure to be a hearty satisfying meal and experience.  


chopped celery, chopped onion, minced garlic - saute in olive oil.  
Add:  
- leftover chicken or cook up some chicken breast, chopped into bite size pieces
- 1 can small green chilies [not necessary to drain]
- 1 can black beans, drained and rinsed
- corn kernels [frozen or canned]
- 1 can fire roasted or diced tomatoes
- 1 carton chicken broth [my favorite is Swanson] 


Now; bring to a boil and simmer until done.  Serve with tortilla chips, sour cream, and grated cheese.  Also, a chopped fresh avocado added to a bowl is nice if you have it.
